Phodi ( Vegetables fries )


This is a side-item in our menu. You can make the phodis with almost any vegetable.With every vegetable, you will crave for more..We usually make with potato, Okra, Eggplant, Bitter-gourd, Ridge-gourd, Radish, Cauliflower, Onion, Keerlu ( bamboo- shoots), Maaddi, Phagla, Kadagi( Bread-fruit).. Oh God, I can go on and on.

Today, I had made with Mullangi ( radish ) and Cauliflower.

Now, one of the ways of making it is like this.

Ingredients
Fine Sooji Rava - about 1/4 cup
Chilli powder - 1 tsp, increase according to spice level
Haldi - a pinch
Salt - to taste
Oil - for tava fry

Method
- Cut the Vegetables into slices, apply salt and keep aside for about 15 mins.
- Mix the rava and the chilli powder.
- Heat the tava, apply oil on it, roll the vegetables in the rava mix on all sides and put on tava.


- Shallow fry by adding oil on and around the vegetables and turn and fry on all sides till cooked and done.


- If the vegetables are ones which take long to cook, then slightly sprinkle some water on them, and cover with a lid and cook till done.
- Hot hot phodis are ready to be eaten.

I had devoured quite a few till I stood n fried all of them.

P.S - I usually microwave the radish ( about 2 mins ) and cauliflower ( about a min )with little water n salt, so that that they cook fast on the tava and my smoke alarm doesn't go beeping :) ....
