Eggless Date Cake...


This is a super-delicious moist cake, which I wanted to try ever since I came across it in Shilpa's blog here. Thank-You Shilpa..
When it came out of the oven, the color was dark brown and looked just like a chocolate cake. I had never made or tasted an eggless cake this good. Plus the process of making it is so simple, that if you have all the ingredients in your pantry, it really goes along in a jiffy. So, if u haven't tried it yet, you ought to soon :)...

Ingredients

All-purpose flour - 1 cup
Dates - 8 Oz ( approx 230 gms ). I used the whole 8 oz. pack of chopped dates.
Milk - 3/4 cup
Sugar - 3/4 cup
Oil - 1/2 cup
Baking Soda - 1 tsp
Chopped Walnuts - 1/4 cup

Method

- If using the regular dates with seeds, you will need to soak them overnight in milk and de-seed them in the morning. But, with the chopped ones that I used, there is no need to soak. Just grind the dates with the milk and sugar till it forms a smooth mixture.
- Take the ground mixture in a mixing bowl, add the oil to it and beat well.
- Sift the baking soda and flour together. Add it to the above mixture little by little and beat till mixed well.
- Dust the nuts with a little flour and fold in the above mixture.
- Put it in a baking dish lined with parchment paper and bake in a pre-heated oven at 350F for about 30-45 mins or till done.
- Let it cool completely before you can cut into pieces and enjoy....
